Since Abigail was born I have encouraged Joel to come up with a meal that would be just "his" thing that the kids would look back on with fondness. He is a really good cook, actually, surprising me when we were dating with some pretty amazing quesadillas (he worked at Chili's for years!) and now has some meals that he cooks up after I've done the preparation for. So he has a pretty good repertoire and since moving here he has added "smoovies" to that growing list!
Joel's parents bought us a Magic Bullet and we sure put it to good use! It seems we always have more fruit on hand than vegetables around here! Costco sells a nice 5 lb bag of frozen blueberries that fills a shelf in the freezer and bananas are pretty much something we ALWAYS have on the counter to one degree of green, yellow or brown! Strawberries have been in our fridge often this spring with the early crop and there's always a cup of orange juice to throw in!
He actually started out making them for himself in the mornings and the kids started asking for tastes...now he has to make at least two at a time, adding whatever fruit he can find! Today's was pineapple, bananas, blueberries and orange juice! So, so tasty and so healthy! It will be a fun thing to experiment with this summer.
Hamburger & scrambled eggs will always hold a special place in my heart & tummy...it's fun to watch the kids identifying special meals and treats with Joel too!
